Ghee can be made only from yoghurt and not from milk. The stuff/thing made from cream is not Ghee in the real sense. In the International market the thing/stuff made from cream is called Butter Oil. Only in India Butter oil is classified as Ghee legally. Whatever available in the Indian market is not Ghee, it is Butter Oil. The “proper” Ghee comes from butter made from curd and not milk. We follow lengthy route of fermenting milk into curd by keeping overnight, gathering the cream from it, churning the cream to extract butter and then finally to ghee. This is the traditional way of doing it and this ghee obtained has numerous medicinal properties.
